Special Vegetable Wrap Recipe for the students at The Heritage School North Campus

Ingredients:

1 whole wheat big roti
1/4 cup hummus
1/2 cup mixed greens (spinach, lettuce)
1/4 cup grated carrots
1/4 cup sliced cucumbers
1/4 cup bell pepper strips
1/4 cup tomatoes sliced
2 tablespoons grated cheese
1 tablespoon olive oil
Salt and pepper to taste
Instructions:

Lay the roti flat on a clean surface.
Spread hummus evenly over the roti.
Layer mixed greens, grated carrots, cucumbers, bell pepper strips, and sliced tomatoes.
Sprinkle with grated cheese.
Drizzle olive oil over the vegetables and season with salt and pepper.
Roll the roti tightly to form a wrap.
Cut in half and wrap in butter paper for an easy-to-carry tiffin.
This wrap is a delicious, nutrient-packed option perfect for a healthy tiffin.
